Basically out of sight, unless you look up, you still need to pay attention to the ceiling finish. For the most part, a light-colored paint, sand-textured paint or popcorn-textured finish is all you need.

Another option is individual boards installed one at a time. Redwood comes to mind due to its widespread use in saunas. It does work in bathrooms although you do have to be careful about the pattern you use.
